Beguni is a common delicious Bengali crispy snack that we enjoy as a tea snack or actually any time snacks. Especially on rainy days, Bengali people love their Tel-e-Bhaja (fried fritters), and beguni is one of the favorite street food of Bengal.

Servings: 20 pieces
Ingredients:
1 cup besan /gram flour/chickpea flour
1/2 teaspoon turmeric powder
1/2 teaspoon salt
1/2 teaspoon sugar.
1/2 teaspoon kalonji / Kala jeera/ Black caraway
1 teaspoon poppy seeds
1/2 teaspoon red chili powder
1 cup water
Pinch of baking soda
1 large eggplant thinly sliced
Oil to fry
Methods:
Cut the eggplants into thin long slices.
In a bowl, whisk together besan or gram flour, turmeric powder, salt, sugar, chili powder, kalonji to combine.
Add poppy seeds and a pinch of baking soda and mix well.
Add water and make a smooth batter. (It wouldn't be too thick or too thin )
Now eggplant slices and dip them into the besan batter and deep fry them to a golden brown.
Enjoy warm crispy beguni with a hot cup of tea.
