Crapes are one of our family favorites. It could be sweet or savory. But my household favorite is the sweet ones. This is a simple yet delicious crepe recipe that can be made easily on any morning. This is a recipe of sweet mascarpone cheese and dry sweetened orange-filled crapes. Orange gives a refreshing flavor and a bright color that can kick start any morning with nice positive energy.

Ingredients for filling:

8 ounce Mascarpone cheese

1 tablespoon honey

1 tablespoon orange zest

3 large dry sweetened orange slices (finely chopped)

For Crape:

1 cup all-purpose flour

2 eggs

1/2 cup milk

1/2 cup orange juice (freshly squeezed )

1/4 teaspoon salt

1/2 teaspoon baking powder

2 tablespoons melted butter

2 tablespoons honey

1 tablespoon orange zest

1 teaspoon orange extract


To make crape :

In a large mixing bowl, add the flour, milk, and eggs and mix nicely. Slowly combine the other ingredients - orange juice, salt, baking powder, melted butter, honey, orange zest, and orange extract, then whisk to combine. Gently mix everything and make a smooth batter.

Heat a lightly buttered griddle or flat frying pan over low to medium heat. Pour a 1/3 cup of the batter onto the pan. Tilt the pan with a circular motion so that the batter coats the surface evenly.

Cook the crepe for about 2 minutes on each side or until the bottom is light brown. Turn with a flat spatula and cook the other side for another 2 mins on low heat.

In the same way, make all the crapes. Then let the crape cool down a little bit, then add the filling. As we will have cheese filling, crapes need to cool down for few mins, unless the cheese filling will melt.

While the crapes come to room temperature, let's make the filling.

To make the filling :

Finely chop candied orange slices.

In a medium mixing bowl, take Mascarpone cheese, honey, orange zest, chopped candied orange, and combine everything.

Take a tablespoon of mascarpone cheese filling and spread it over the bottom half of the room temperature crape, and fold it like this.👇

Serve the freshly cooked mascarpone cheese-filled orange crapes with fresh fruits and extra honey or maple syrup.
