MY EVER BAKED BEST LEMON BLUEBERRY CUPCAKES/MUFFINS

Love my Coffee with Cupcakes /Muffins. But ...always wondered what is the difference between Blueberry cupcakes with no frosting and Blueberry muffins. Then I found out Muffins are denser than cupcakes (without frosting). So I thought of baking Lemon Blueberry cupcakes with no frosting as I like fluffy soft cupcakes.


Prep time: 15 mins

Cook time: 30 to 35 mins

Servings: 18 to 20

Baking Temperature: 350 Degrees F


Ingredients:


2 cups all-purpose flour

1 and 1/4 teaspoons baking powder

½ teaspoon salt

1cup white sugar

4 eggs

2 tablespoon milk

1 cup room temperature softened butter

1 cup of Blueberry

Zest of two lemons

1 teaspoon Vanilla extract



Methods :


Preheat the oven to 350 degrees F.

Mix the flour, baking powder, and salt together. In a large mixer, bowl mix softens butter and sugar together then add one egg at a time and mix. Add in milk and vanilla. Pour the flour mixture. Add lemon zest and Blueberry to the end and fold it lightly. Pour the batter into paper-lined muffin pans.

Bake for 30 to 35 minutes, or until the top is lightly golden.


Let it cool down on a cooling rack for 10 mins.



Enjoy fresh cupcakes with a hot cup of tea or coffee.
