Ingredients
For the Base:
350 g biscoff cookies (1and 1/2 packet)
1/4 cup unsalted butter, melted
For the Cheesecake Filling:
675 g or 3 cream cheese block, softened at room temperature
3 eggs
3 tablespoons flour
1 can condensed milk
1 tsp cardamom powder
1 tsp rose water (optional)
1/2 cup sour cream
1 tsp lemon juice
10 gulab jamuns cut in halves (store-bought or homemade)
For Garnish:
2 gulab jamuns
1 cup heavy whipping cream
Pistachios, sliced (optional)
Edible rose petals (optional)
Instructions
Step 1: Prepare the Base
Crush the cookies into fine crumbs using a food processor or by placing them in a zip-lock bag and rolling with a rolling pin.
Mix the crumbs with melted butter until the texture resembles wet sand.
Press the mixture evenly into the base of a 9-inch springform pan. Use the back of a spoon or a flat-bottomed glass to smooth it out.
Bake it for 15 minitues in 350 degree F oven.
After 15 mins, take it out and let it cool down.
Step 2: Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese blocks until smooth and creamy.
Add condensed milk and cardamom powder (and rose water, if using). Beat until well combined.
Next add flour and eggs little by little.
Add the lemon juice and sour cream and mix until smooth and creamy.
Step 3: Assemble the Cheesecake
Pour half of the cheesecake filling over the prepared crust and spread evenly.
Place the halved gulab jamuns over the filling in an even layer.
Cover with the remaining cheesecake filling and smooth the top with a spatula.
Bake the cheesecake at 325°F for at least 1 hour in water bath.(So it doest crack or sat down after baking).
Step 4: Garnish and Serve
In a separate bowl, whip the heavy cream until soft peaks form.
Fill a piping bag with the whipped heavy cream.
Decorate the cheese cake with whipped heavy cream.
Before serving, arrange the halved or quartered gulab jamuns on top of the cheesecake.
Sprinkle sliced pistachios and edible rose petals for a festive touch.
Slice and serve chilled.
