Candied Orange Coconut Malai and Dragon Fruit Honey Lime Popsicles!

Officially Spring is over, and Summer is here! ☀️😎⛱🕶

Saying goodbye to spring with beautiful spring colors and welcoming summer with some summer vibes!😃

Though it’s not that hot here in California, days are warmer and longer for all sorts of summer activities!

Who doesn’t like to have one of these popsicles on hot summer days? It’s healthier and tasty, and on top, it has no added refine sugar other than honey!

Dragon fruit is a tropical fruit and native to Mexico. Chose it for its vibrant color and its rich nutrients. It has several varieties,, and I chose the red pulp black seed one and the frozen cubed ones.


Making popsicles is fairly easy and quick. And the beauty of homemade is, you can control the sugar level and the ingredients.

Prep Time: 8 hours to overnight Making Time: 30 minutes

Servings: 8


Ingredients:


1 cup coconut milk

1/2 cup dried coconut powder

4 tablespoons honey

2 tablespoons chopped candied orange

1 cup cubed frozen dragon fruits

1 lime

Some more toasted coconut for garnish


First, make the Candied Orange Coconut Malai :

  • In a mixing bowl, add coconut milk, 2 tablespoons honey and coconut powder and mix well.

  • Take clean popsickle molds and pour this mix to 1/3 of the molds.

  • Put them in the freezer and let it set for an hour.



  • In the mean time, Let's make the dragon fruit mixer.

  • Take out the frozen dragon fruits from the freezer ahead of time to have in room temparature.

  • In a mixer grinder take the frozen cubed dragon fruits, 2 tablespoons honey, lime juice and 2 tablespoons of water and grind it to a smooth paste.





  • Take out the mold from the freezer with lightly frozen candied orange and coconut mixer.

  • Pour the Dragon fruit mixer over 1/3 filled coconut mixer.

  • Fill up the mold and put the caps or insert the sticks in the molds.

  • Put molds back in the freezer for at least 6 to 8 hours or overnight to set compleately.

When it sets compleatly, take out from the freezer. Take out from the mold and dip the top into toasted coconut for garnish. Enjoy the yummy popsickles. Here is the final product .
