CRUNCHY AND MELTS IN MOUTH MERINGUE COOKIES

Holiday time when friends and family come to visit us, so we need sweet treats at home to give them. Cookies and Cakes are the best ways to share as gifts during this holiday time. Since it is cold outside, it is the best time to have a hot cocoa cup to hot chocolates with freshly baked cookies. I bake quite a lot amount of different kinds of cookies each year.

Meringue cookies are one of my favorite cookies crunchy first and then melts in the mouth like cream. This is a happy and colorful time of the year. So a little bit of color will go long. You may add whatever color you like that will have the holiday cheer at home.

Prep time: 30 mins

Cooking time: 60 mins

Serving: 100 small cookies


Ingredients:


  1. 4 large Egg whites

  2. 1 cup granulated Sugar

  3. Pinch of Salt

  4. 1/2 teaspoon Lemon juice

  5. Food coloring (optional)

  6. 1 teaspoon Vanilla extract


Methods:

  • Preheat oven to 200°F.

  • Line baking sheets with parchment paper.

  • Separate the egg whites and egg yolks.

  • Take the egg whites in a clean medium bowl and mix with sugar.

  • Put the bowl with egg whites and sugar on a double boiler (Take a deep saucepan with cup water, bring it to a boil, and put the egg white bowl on top of the boiling water pan. Make sure that the bottom of the egg white bowl should not touch the boiling water).


  • Whisk continuously to warm the mixer to a temperature of 130 degrees.

  • When the mixer temperature is 130 degrees, turn off the hit.

  • Add a pinch of salt and the lemon juice to it.

  • Put the egg-sugar mixture into a stand mixer or beat with a hand mixture.

  • Beat egg whites slow to high speed until meringue is glossy and very stiff.

  • Add vanilla extract or other favoring that you like.

  • Divide it into smaller quantities and add food colors of your choice.

  • Take the white or colored meringue in a piping bag with the desired nozzle.

  • Pipe your desired shape on the parchment-lined tray.




  • Place the tray on the center rack and bake for about an hour.

  • Turn the oven off and leave the meringues in the oven for an additional 2 hours more.
