We recently traveled to Switzerland, and in Lucerne we enjoyed a delicious cheese fondue dinner. We absolutely loved it in the cold weather — it was warm, cozy, and so comforting. After coming home, I wanted to recreate the recipe with my own Indian touch, so I made it a little spicier and added extra flavors to suit our taste. It turned out to be the perfect blend of classic and desi comfort.
Ingredients (Serves 4)
1 cup heavy cream
1 cup milk
½ cup dry white wine
3 cups grated cheese (mix of Gruyère, cheddar, or mozzarella)
1 tbsp butter
3 cloves garlic, finely minced
1 small red chili,( finely chopped )
½ tsp chili flakes
¼ tsp black pepper
Pinch of nutmeg
Step 1:
In a pot, melt butter on low heat.Add garlic + chili and sauté 30–40 seconds until fragrant (don’t brown).
Step 2:
Pour in milk and cream.Heat gently .
Step 3:
Add cheese a handful at a time, stirring continuously in a figure-eight motion.Keep heat low so the cheese melts smoothly.
Step 4:
Mix white wine.Stir into the fondue. Cook 1–2 minutes until silky and slightly thick.
Step 5: Season
Add pepper, and nutmeg.
Serve Immediately
Pour into a fondue pot or heavy bowl. Keep warm over low heat.
Serve with
Toasted bread cubes

Creamy, garlicky, a little spicy — total comfort food for cold evenings .
