MOGHLAI STYLE EGG CHICKEN STUFFED PARATHA

Like all other Bengali, my family and I love Mughlai parathas, so I thought of making Mughlai parathas. If you are wondering what Mughlai paratha is, let me tell you that what Mughlai paratha is.


It's a popular Bengali street food that is believed to have originated in Bengal during the Mughal empire. It’s a crispy, flaky, pan-fried flatbread that’s stuffed with fluffy eggs and ground meat.


Usually, Mughlai paratha is rolled out and folded after the stuffing is added, but my paratha is a variation of the traditional one, after stuffing, it's rolled out again.



PREP TIME: 30 MINUTES COOK TIME: 30 MINUTES SERVINGS: 6 pcs


INGREDIENTS:


To make egg chicken stuffing.


1 lb ground Chicken

5 eggs

1 green chili

1/2 teaspoon salt

1/2 teaspoon Sugar

1 cup chopped Onion

2 teaspoons Garlic paste

2 teaspoons ginger paste

1/2 teaspoon Cumin powder

1/2 teaspoon Coriander powder

1/2 teaspoon Turmeric powder

1/4 teaspoon Red chili powder

1 tablespoon Oil


To make paratha:


2 cups of all-purpose flour

1 teaspoon whole Ajwain or ajowan caraway seeds

1 teaspoon salt

1 tablespoon oil

3/4 cup of warm water


Ghee to fry the parathas


Step 1: Make the Dough Ready


In a mixing bowl, mix all-purpose flour, Ajwain, salt, oil, and 3/4 cup of water.

Add water little by little and make a soft dough.

Wrap the dough with plastic wrap or with a kitchen towel and rest the dough for at least 15 mins.


In the meantime, make the stuffing ready.


Step 2: Make the Egg Chicken Stuffing


Egg chicken stuffing is pretty simple, easy, and straightforward.

Heat oil in a frying pan on medium heat. When hot enough, add the chopped onion and saute for 2 mins.

Next, add all spices (Ginger paste, Garlic paste, Cumin powder, Coriander powder, Turmeric powder) and mix it.

Then add red chili powder, salt, and sugar ) and mix well.

Add 2 tablespoons of water to incorporate everything.

Then add ground chicken and mix with the spices properly.

Cook for 8 to 10 mins until the chicken is cooked completely.

Then break the eggs and add them to chicken and spices and mix well.

Cook for another 5 mins or until the stuffing is dry enough like this 👇.



Step 3: Make the EGG Chicken Stuffed Paratha

Divide the dough into 6 pcs.

Roll out the dough to approx 3 inches diameter and put a tablespoon of stuffing in the middle of the rolled out dough.

Make close the stuffing and make a dough ball again.



Roll out the dough ball and make the paratha.



Fry the Paratha with Ghee or oil on medium heat.

Serve the hot egg chicken paratha with pickle and yogurt or with potato curry.
