This is one of my favorite pizzas of all kinds. I tend to love pizzas with a slightly spicier sauce like pesto . If you’re craving a spicier pizza, you’ll be happy to have it.
Prep Time: 2 hours and 30 mins
Baking Time: 15 minutes
Servings: 4 slices
Ingredients:
For Pizza Dough:
2 cups all-purpose flour
1 packet instant yeast (2 ¼ teaspoons)
1 tablespoon sugar
1/2 teaspoon salt
2 Tablespoons olive oil
3/4 cup warm water
For Building the Pizza :
1 jar of Artichoke hearts (store-bought)
1 cup pesto sauce (store-bought)
1 jalapeno (chopped)
1 cup Mozzarella cheese
Drain the water and rinse the artichoke's hearts. Then slice them into smaller pieces and keep them aside as a topping.
Store-bought or you could make your own pesto sauce.
Methods:
Combine warm water, instant yeast, and sugar in a bowl and leave it for 5 mins.
In a large mixing bowl, add olive oil, salt, flour, and the yeast mixture. Use a wooden spoon to mix well. You could use an electric stand mixer to mix it.
Make a slightly sticky dough.
Drizzle little oil into another large bowl.
With your hand, make the dough into a round ball and transfer it to the greased bowl.
Then cover the bowl tightly with plastic wrap and place it in a warm place.
Allow dough to rise for 2 hours or until the dough is doubled in size.
Preheat the oven to 425 degrees C.
After 2 hours, when the dough has risen, use your hands to gently deflate it and transfer it to a lightly floured surface.
Then knead the dough for 2 to 3 mins or until it turns into a smooth ball.
Divide the dough into four equal portions.
Take a portion and roll it into an 8" circle with a rolling pin.
Transfer the flat dough to a pizza pan.
Spread the pesto sauce over the base and next spread the Artichoke hearts, sprinkle a good amount of mozzarella cheese and jalapeno slices.
Bake it for 10 to 12 mins or the sides are golden brown.
