CHICKEN POT PIE

Pot pie is one of my favorite dishes when I go to a restaurant and if it is on the menu.:) Pot pie is a baked meat pie, covered with pastry dough. A variety of meat can be used for the filling. I used pork belly and Turkey for the filling and puff pastry for the top crust. This pot pie is perfect for a hearty dinner. I love pork belly, so I added it and it adds a different texture to the pot pie. If you do not eat or like pork, do not use it . Still, it's yummy. Instead of chicken and pork belly, you can use only vegetables. It is yummy too. Also, You can choose to bake it in one big bowl or bake it individual smaller baking bowl for each serving.
For Pot-pie you need filling and the top crust.

1 teaspoon olive oil
1/2 cup chopped pork belly
2 tablespoon butter
1/3 cup chopped onion
1 clove of minced garlic
1 tablespoon chopped fresh thyme leaves or 1 teaspoon dry thyme
2 tablespoons flour
1 and 1/2 cups chicken broth
2 tablespoons heavy cream
1 teaspoon crushed chili pepper or according to your taste
1/2 cup cooked cubed chicken breast
1/3 cup carrot cut into small pieces
1/3 cup frozen peas
1/3 cup frozen corns
1/3 cup cubed potatoes
1/3 cup chopped button mushrooms
1 Puff Pastry sheet for the crust
Preheat the oven to 450 degrees F for baking the pot pie.
In a pan, heat the oil over medium heat.
Add the chopped pork belly and fry until brown and crispy for about 5 minutes.
Add the butter, onion, and garlic and saute for 2 mins.
Add carrots, potato, and mushroom to the pan and cook for 5 mins.
Season with salt and pepper.
Add the flour and cook for 2 mins.
Add the chicken broth and mix well.
Then add roasted cubed chicken, peas, corn, thyme leaves, and chili pepper.
Bring it to a boil and cook until the carrots and potatoes are tender.
Add heavy cream.
Check the seasoning and add salt and pepper if it's needed.
Put this filling in one medium-sized baking bowl or split it into two individual smaller portion baking bowl.
Roll out a puff pastry sheet a little bit.
Cut the dough-sheet into a baking bowl size circle and place it on top of the filling and cover it well.
Bake it for 30 mins or until the crust is golden brown.
Rest it for a few mins and serve warm.
