Achari Lamb Tikka with Veggies!

Tikka is great if you want to cook an easy spicy roasted meat dish. You could use any boneless meat or fish fillet or paneer (Indian cottage cheese) or even only veggies. Tikka is a grilled small piece of meat. The traditionally marinated meat chunks threaded onto skewers and cooked in the grill. This is a great appetizer. For this, you need few skewers and a grill. If you could do not have a grill, use a skillet and put the meat and veggies treaded skewers on top of it. To make it in an oven, preheat 350 degrees F. Line a baking tray with aluminum foil.

Place the meat and veggie skewers on the tray. Spray or brush with oil and grill for 15-20 minutes.

Servings: 7 servings


Ingredients:


1 kg boneless lamb (cut into 1.5-inch size cubes)

1 tablespoon ginger paste

1 teaspoon garlic paste

1 teaspoon turmeric

1 teaspoon cumin powder

1 teaspoon coriander powder

1 teaspoon dry roasted fenugreek powder

1 teaspoon fennel powder

1 teaspoon red chili powder ( or according to your taste)

1 teaspoon salt (or according to your taste)

1 teaspoon sugar

3 tablespoons yogurt

1/2 teaspoon ground black pepper powder

1/4 teaspoon clove powder

1/4 teaspoon cardamom powder

1/4 teaspoon cinnamon powder

Juice of 1 lemon

1 tablespoon mustard oil


Cubed veggies of your choice

1 Bellpepper

1 Onion

10 Small button mushrooms

1 Zucchini sliced

1 Yellow Squash sliced


Methods:


First, marinate the meat.

You should marinate the meat for at least four hours if you could do it overnight. The more you will marinate the meat will be soft and flavourful.

Mix everything in a large bowl and put the meat in it.

Mix the spice with the meat nicely and cover it with plastic wrap and keep it inside a freeze for at least four hours.

Marinate the cubed veggies with salt, pepper, and lemon juice. If you like you could add a tablespoon of the marinade to it and mix well.




Thread the marinated meat and veggie pieces in wooden or metal veggies and meat skewers.

You could tread separately or mix veggies and meat together. I made it both ways.



Turn on the grill on medium-high heat and spray or brush with oil.

Grill the meat and veggie skewers until the veggies and meat nicely browned and cooked.

Serve warm with any dipping sauce.
