The lychee martini is a delicate, and fruity cocktail that has an aroma and the sweet taste of lychee fruit. It's really refreshing but easy to make. It only needs three ingredients - Lychee syrup, and Lime juice, and Vodka.

For Lychee Syrup:
1/2 cup fresh peeled and pitted lychees to make Lychees
1 cup water
1/4 cup of sugar
Zest of one lime
To make the cocktail:
8 ounces Lychee Syrup
4 ounces Vodka
2 ounce Lime juice
Some ice cubes
Peeled and pitted lychees for garnish
Make the Lychee Syrup:
Combine 1 cup each of sugar and water in a saucepan and put it on medium heat.
Bring to a boil and let the sugar dissolve.
Add the lychees and lime zest to it.
Reduce the heat, and cook for 5 mins on low heat.
Remove from the heat and let it cool for about 60 minutes.
Strain the fruit completely from the syrup and squeeze every bit of the juice from the lychee.
Keep the into a jar.
Make the cocktail :
Take some ice in a cocktail shaker.
Then add the vodka, lychee syrup, and lime juice.
Shake well and pour it into a martini glass.
Garnish with peeled and pitted whole lychees.
