PINEAPPLE FRIED RICE

Every time I go to a Thai restaurant, one item that should be in common in my order is Pineapple fried rice. This year, I made it many times at home because of the lockdown, and every time, it was really turned out great. So though of sharing the recipe with you all. Here I made Shrimp pineapple fried rice, but you may use any other meat that you like. You may use chicken, pork, beef, or if you are a vegetarian, use vegetables and tofu and avoid using eggs, and fish sauce.

Cooking time: 30 to 45 mins

Serving: 3 - 4


Ingredients:


You need 3 cups of cooked rice for this recipe. It is better to cook the rice at least 2 to 3 hours before or a day before making fried rice. You can use regular long-grain rice, Jasmin rice, or basmati rice. I used jasmine rice that I cooked a day before.

Cut the pineapple in halves and gently scoop out the inside flesh portion. Do not forget to take out the core part. Then cube the flesh part. Save the pineapple shell for serving the cooked fried rice. I am using 1heapped cup of pineapple for this recipe.


3 tablespoon of oil

3 tablespoon soy sauce

2 tablespoon sweet chili sauce

1 tablespoon chili oil

1 tablespoon sesame oil

1 tablespoon fish sauce ( do not use for veg option)

1/3 cup cashew nuts

1/3 cup raisins

2 teaspoon chili flakes

1 teaspoon sugar

2 teaspoon salt

1 cup bell pepper (mixed three colors)

1/3 cup carrot

1/3 cup snow peas

1/3 cup peas

1/3 cup chopped mushrooms

1/3 cup green beans

1 chopped jalapeno chopped (according to your taste - it's optional)

1 cup shrimps seared in a little bit of oil (optional)

4 eggs fried and scrambled with a little bit of oil (optional)

1 tablespoon chopped basil leaves


Methods:


Take a wok like frying pan with 3 tablespoons of oil and put it on high heat.

Put all the vegetables and chopped jalapenos in the frying pan and saute the vegetable in high heat for 4 to 5 mins.



Add pineapple and cook for another minute.

Then add rice and mix everything together.

After that, add cashew, raisin, fried scrambled eggs, fried shrimps, sugar, and salt and mix everything together.

Add all sauces (soy sauce, sweet chili sauce, chili oil, sesame oil, fish sauce, and chili flakes).

Stir everything together in high heat until all the rice gets warm thoroughly, and all sauces incorporate with rice and vegetables.

Turn off the heat and sprinkle chopped basil.

Serve the warm cooked pineapple fried rice in the empty pineapple shell.
